Located in the southern portion of the Minas Gerais region of Brazil, this coffee is grown at the farm owned by Raul Assuncao Pinto, who works alongside his two sons and son-in-law. They are focused on continuing to increase the quality and productivity of the coffee plants, working with agronomists to care for the soil and plants. After harvest, the coffee cherries are dried in the cherry form, later stripped from the coffee to be dried. While natural coffees from most regions of the world have a fruit-forward profile, natural coffees from this region of Brazil result in a nutty, chocolately, coffee with a mild acidity to create a smooth, lingering finish.
