This lot of coffee is a blend of coffees from southern Tanzania. While this is a washed coffee, it is fermented after depulping from 24-72 hours, then cleaned of the fruit's mucilage and dried on raised beds. The peaberry is technically a genetic mutation within coffee, creating one coffee bean per cherry vs. the standard two coffee beans. This creates a much smaller, but flavorful bean. This cup is balanced, yet complex, with sweetness balanced by bright, citric acidity, and underlying white grape notes.
