Folly’s Finest features a rotating single origin coffee selected by Head Roaster Folly Jeff, a certified Q-Grader and nationally ranked coffee taster (forreal, there’s a national competition). Every so often, we taste a sample that knocks our socks off, but due to limited availability, higher price points, or a number of other reasons it doesn’t fit within our existing selections. Folly’s Finest allows us to jump on these opportunities.

This coffee comes from the Kilimbi Washing Station via our friends at Higa Coffee Importers. This washing station is located on the shares of Lake Kivu. The washing station supports farmers to get quality seedlings to improve farmers' production, agriculture skill and technique training, and health insurance for all their farming partners. The Kilimbi Washing Station is the first station in Rwanda legally allowed to produce naturally processed coffees. After being picked at peak ripeness, this coffee is sorted to remove any damaged or immature cherries. Low-density cherries are removed via a float tank and the high density cherries are moved to a drying bed for natural processing for 31 days. This imparts a berry-forward flavor profile, with a light lemon citrus note and a milk chocolate sweetness.
